Water caltrop grows submerged in lakes and ponds. The black shell you see in the photo protects the white nut inside, but the shell and nut often have parasite larvae on them, especially _Fasciolopsis buski_, the giant intestinal fluke. In many Asian countries this is the #1 cause of fluke infection from plants.
*How to prepare safely:*
- *Never eat raw.* Boil the whole nut for 10-15 minutes, then crack the shell.
- Scrub the shell with a brush before boiling.
- If you must eat the nut raw in salads, buy only “pre-boiled and peeled” packaged versions from the store.
*Health tip:* Cooked water caltrop is starchy, sweet, and totally safe. It’s used in soups and desserts across China, India, and Vietnam.
*2. WATER SPINACH / KANGKONG / MORNING GLORY*
*Why it’s risky:*
This leafy green grows in ditches and wetlands. It’s a favorite for _Fasciola_ liver flukes. The stems are hollow and can trap snail larvae and eggs.
*How to prepare safely:*
- Soak in salt water or vinegar water for 20 minutes.
- Rinse each leaf and stem under running water, rubbing to remove slime.
- Best practice: lightly stir-fry or blanch for 30 seconds. You still get the crunch but kill parasites.
*Health tip:* It’s full of iron and vitamin A. Just don’t eat it straight from the market without washing.
*3. LOTUS ROOT AND LOTUS SEEDS*
*Why it’s risky:*
Lotus grows in muddy ponds. The root has lots of holes that trap mud, bacteria, and sometimes parasite eggs. Lotus seeds also sit in pods in the water.
*How to prepare safely:*
- Peel the brown skin off the root.
- Slice and soak in clean water, changing the water 2-3 times.
- Boil for 5 minutes before adding to salad, or cook fully in soup.
*Health tip:* Lotus root is amazing for gut health. Cooking makes it crisp and safe.
*4. WATERCRESS*
*Why it’s risky:*
Watercress grows in running streams. It’s beautiful in salads, but streams can be contaminated with runoff, animal feces, and _Giardia_ or _Cryptosporidium_.
*How to prepare safely:*
- Buy from reputable farms, not wild streams.
- Soak in cold water with 1 tbsp vinegar per liter for 15 minutes.
- Rinse 3 times in clean water.
- For pregnant women, kids, and seniors: lightly blanch.
*Health tip:* Watercress is a superfood for vitamin K and antioxidants. A quick rinse makes it salad-ready.
